Girlonabike Thanksgiving Recipes

With Thanksgiving already coming, you might still be thinking of what to serve or bring to the table. Here are a few of my favorite recipes that I developed. They are healthier alternatives to the traditional ones, are simple to make and taste great! 

 Agave Sweetened Cranberry Sauce

1 pound fresh organic cranberries 

1 1/4 cups water

1/2 cup organic currants

2 tablespoons organic raw agave nectar

1/8 teaspoon cinnamon 

1 teaspoon orange zest

1/4 teaspoon fresh ginger zest

Pour cranberries and water into a pot, bring to a boil for about 30 seconds then simmer for 10 minutes, add currants and simmer for 3 more minutes, add cinnamon, ginger and orange zest and simmer for 5 more. 

 

Date Crusted Agave Sweetened Pumpkin Pie

One can organic pumpkin

4-6 tablespoons raw organic agave nectar 

1 can evaporated skim milk

2 organic eggs 

1 teaspoon organic cinnamon

1/4 teaspoon organic ginger

1/8 teaspoon organic allspice or cloves 

For the crust:

2 cups raw organic walnuts

8 organic dates 

Blend walnuts in food processor adding one date at a time until a chunky think paste forms. Take paste and press into pie dish to create shell.

Combine pumpkin, evaporated milk, and spices. Mix in eggs and agave until smooth. Pour into pie crust and bake for 15 minutes at 425 degrees, then reduce to 350 degrees for additional 35-40 minutes. Cool before serving.
